Hummus
I’m always appalled at how expensive pre made hummus is. Seeing how it’s made up mostly of chickpeas, and you can buy those for about $1 a can!
Here’s a simple recipe for hummus. This is a basic recipe that you can add extra ingredients to like scallions, olives, and even roasted red peppers.
16 oz can of chickpeas
1/3 c. reserved liquid from chickpeas
3 Tbsp fresh lemon juice
1 Tbsp tahini
1 clove garlic, roasted
1/2 tsp salt
3 Tbsp olive oil
Combine chickpeas, reserved liquid, lemon juice, tahini, garlic, and salt in food processor until consistency is smooth. With food processor still running, drizzle in olive oil until fully incorporated.
Serve with a drizzle of olive oil and grilled pita bread!
